Hawthorn Berry Butter
$12
Hawthorn trees (Crataegus oxycanthus), also known as Thornberry or Thornapple, are members of the rose family and common throughout the Alleghenies. The tree's hard berries, which range in color from deep burgandy to bright orange, have traditionally been used to promote the health of the circulatory system, and treat high blood pressure, angina, and arteriosclerosis. In Europe today, hawthorn is widely regarded as a safe and effective treatment for the early stages of heart disease.
The berry's distinctive flavor is profoundly tart, but without bitterness or tannin. In well-sieved, butter form, and with just a wee bit of sugar added, it makes an outstanding crust for baked meats, and a memorable counterpoint to dried fruit and strong cheese.
Ingredients: Wildgrown hawthorn berries, organic cane sugar, organic lemon.
